Bourgeoisie and appetite. The 19th century restaurant as a sign of a fashionable lifestyle - The 19th century was the heyday of the ’bourgeois’ restaurant. The development of this institution was no accident as the function of the restaurant in this era was to enable the influential bourgeoisie to distinguish itself by creating a marginal identity through the pursuit of a fashionable lifestyle. The adoption of a characteristic pattern of behaviour not only allowed the bourgeoisie to distance itself from the other strata of society, it also contributed to its identification as a social class. The restaurant came to be seen as one of its hallmarks, signifying both a distinguishing and a distinguished manner of being socially present.
